Someone once got paid to write that celery burns more calories than it contains. That sentence has been recycled for decades, because it sells the one thing every dieter wants: food that un-eats itself.

The human math says the same thing. The energy cost of processing a meal, called diet-induced thermogenesis, is well measured. Westerterp's review puts it at 20-30% of the calories consumed for protein, 5-10% for carbohydrate, and 0-3% for fat, with a mixed diet costing roughly 10% overall. One nuance worth keeping: that thermogenesis number is why calories in, calories out is messier than it looks. You keep about 70-80% of protein calories and about 97% of fat calories. The macro mix changes the effective total. It just never, ever turns a food negative.

The negative-calorie story survives because it's built on two true facts glued together wrong. True: digestion costs energy. True: celery contains very little energy. Read the water column and the trick reveals itself. These foods are 88-96% water. You're mostly eating flavored hydration with fiber scaffolding. That's not an insult; it's the entire mechanism. Water and fiber fill the same stomach that calorie-dense food fills, for a hundredth of the price.
Scale check, because per-100-gram numbers hide the punchline. An entire head of iceberg lettuce, half a kilo, is about 70 calories. Willpower diets ask you to feel unsatisfied on purpose, every day, indefinitely. Volume diets change the exchange rate so the same full feeling costs less.
Run the numbers on one swap. A 100-gram bar of dark chocolate is 598 calories in USDA's data. The same weight of strawberries is 32. Identical grams, identical hand-to-mouth ritual, nineteen-fold price difference. Nobody's willpower is nineteen times stronger than yours. Some people just snack from a different table.
This also explains why the near-zero list beats its processed "diet food" competitors. A 100-calorie snack pack disappears in ninety seconds and leaves the stomach unbriefed. A 100-calorie mixing bowl of watermelon takes ten minutes and physical commitment. Same entry in the log, completely different rest of the evening.
